Preparation of cognac distillates with addition to wine material of crude alcohol from yeast sediments | Приготовление коньячных дистиллятов с добавлением в виноматериал спирта-сырца из дрожжевых осадков

English. Crude alcohol was produced on a continuous machine Komsomoletz from fresh yeast sediments of cognac production collected after the 1-st racking to completion of fermentation and from yeast sediments stored for 1.5 and 3 months. The crude alcohol having a strength of 68% was added to the wine material in an amount of 1.5, 2.5. 5.0, 7.5, 10.0, 15.0 and 20.0% in terms of absolute alcohol. Raising the concentration of crude alcohol introduced in the distilled wine material greatly increases the weight concentration of esters, including enanthic esters: ethyl caprynate, ethyl caprylate and others positively influencing the organoleptic characteristics of cognac distillate. So, if in the control the content of ethyl caprynate was 8.22 mg/100 cub. cm, at the concentration of added crude alcohol in a range of 1.5-20.0%, this value increases up to 14.55-42.92 mg/100 cub. cm. As an amount of the added crude alcohol, also the weight concentration of higher alcohols, acetic acid and furfurol increases. The best organoleptic indicators have been discovered in the cognac distillate samples obtained by adding crude alcohol to wine material from 5.0 to 10.0%. The cognac distillate samples having high concentrations of enanthic esters there were observed pronounced flower and fruit tones, however, strong yeast and crude alcohol tones and a light fusel note. When the content of crude alcohol was reduced in the wine material to 5.0-7.5%, fusel, yeast and crude alcohol tomes disappeared. In case of using yeast sediments stored for 1.5 and 3 months it is noted that if the storage time increases the weight concentration of higher alcohols and esters in the cognac distillate grows. As the storage time of the yeast residues enanthic and flower notes in the cognac distillate enhance, however, fusel and crude alcohol tones are also felt. The optimum amount of introduced crude alcohol in wine material is 5-6%.

Спирт-сырец (СС) получали на аппарате непрерывного действия из свежих дрожжевых осадков (ДО) коньячного производства, собранных после 1-й переливки по завершении брожения, и из ДО, хранившихся 1,5 и 3 мес. СС крепостью 68% добавляли в виноматериал (ВМ) в количестве 1,5; 2,5; 5,0; 7,5; 10,0; 15,0 и 20,0% в пересчете на абсолютный алкоголь. При повышении концентрации СС, вводимого в перегоняемый ВМ, значительно увеличивается массовая концентрация средних эфиров, в т.ч. энантовых эфиров: этилкаприната, этилкаприлата и др., положительно влияющих на органолептические характеристики коньячного дистиллята (КД). Так, если в контроле содержание этилкаприната составляло 8,22 мг/100 мл, то при концентрации добавляемого СС в диапазоне 1,5-20,0% эта величина повышается до 14,55-42.92 мг/100 мл. С увеличением количества добавляемого СС возрастает также массовая концентрация высших спиртов, уксусной кислоты и фурфурола. Наилучшие органолептические показатели выявлены у образцов КД, полученных при добавлении СС в ВМ от 5,0 до 10,0%. В образцах КД с высокими концентрациями энантовых эфиров, соответствующими количествам СС 15,0 и 20,0%, дегустаторы отметили ярко выраженные цветочные и плодовые тона, однако присутствовали сильный дрожжевой и сырцовый тона и небольшой сивушный оттенок. При снижении содержания СС в перегоняемом ВМ до 5,0-7,5% сивушный, дрожжевой и сырцовый тона исчезали. В случае использования ДО, хранившихся в течение 1,5 и 3 мес. отмечено, что при увеличении срока хранения массовая концентрация высших спиртов и средних эфиров в КД повышается. Так, при добавлении в ВМ СС, полученного из свежих ДО, в количестве 7,5% массовая концентрация высших спиртов составила 262 мг/100 мл, при использовании ДО, хранившихся 1,5 и 3 мес., этот показатель увеличился до 296 и 298 мг/100 мл. С увеличением сроков хранения ДО усиливаются энантовые и цветочные оттенки в КД, однако ощущаются также сырцовые и сивушные тона и тона разложившихся дрожжей. Оптимальное количество вводимого СС в ВМ – 5-6%.
