The influence of freezing on sensor properties of raw meat | Влияние замораживания на сенсорные свойства мясного сырья

English. Studied were sensor and biochemical parameters of raw meat in the process of storage at t –18 degrees C to develop an express-procedure for identifying the storage time in a frozen condition by the electronic nanobalance method. The study object was cooled pork stored at t -18 degrees C for 6 months. As is shown, by month 4 of storage the smell intensity of surface and deep layers of pork reduces by 25.9% and 42.0%, respectively compared to the cooled raw meat. As a result long low temperature storage of pork the amount of sarcoplasmatic and fibrilllary proteins reduced by 10.4% and 7.3%, respectively; the content of alkali-soluble proteins grew by 11.2%. Beginning since the 4-th storage month the content of non-protein nitrogen in pork intensively increases (by 5.1%). The amount of low molecular nitrogen-containing compounds increases by 52.3%, the content of lysine, valine, trioptophane, methionine and threonine lowers. The shelf life of the pork is essentially limited by lipid oxidation. Over the storage time of frozen meat the acidic number increases compared to the initial raw material by 51.4$, the content of volatile fatty acids including those having a short carbon chain – 4.1 times. There is a tendency toward isomerizing unsaturated acids. By the aid of a device "electronic nose" there has been built a graphic of spatial arrangement of dots characterizing the qualitative and quantitative composition of the gas phase of the frozen meat stores at t -18 degrees C for 6 months. On its basis, a metering graphic has been developed to determine the freshness of cooled meat. A possibility of using multi-sensor systems to identify the storage time of pork has been found allowing thereby performing an express-analysis of the quality of meat products during incoming test at processing enterprises, laboratories, markets, etc.

Russian. Изучали изменения сенсорных и биохимических показателей мясного сырья в процессе хранения при -18 град. C для разработки экспресс-методики идентификации сроков его хранения в замороженном состоянии методом электронного нанобаланса. Объектом исследования служила охлажденная свинина (СВ), хранившаяся при -18 град. C в течение 6 мес. Показано, что к 4 мес хранения интенсивность запаха поверхностных и глубоких слоев СВ снижается соответственно на 25,9% и 42,0% по сравнению с охлажденным сырьем. В результате длительного низкотемпературного хранения СВ количество саркоплазматических и фибриллярных белков сократилось соответственно на 10,4% и 7,3%; содержание щелочерастворимых белков возросло на 11,2%. Начиная с 4-го мес. хранения в СВ интенсивно (на 5,1%) увеличивается содержание небелкового азота. Количество низкомолекулярных азотсодержащих соединений увеличивается на 52,3%, снижается содержание лизина, валина, триптофана, метионина и треонина. Срок годности СВ существенно лимитируется окислением липидов. За время хранения замороженного мяса кислотное число увеличивается по сравнению с исходным сырьем на 51,4%; содержание летучих жирных кислот, в т.ч. с короткой углеродной цепью - в 4,1 раза. Проявляется тенденция к изомеризации непредельных кислот. С помощью прибора "электронный нос" построен график пространственного расположения точек, характеризующих качественный и количественный состав газовой фазы замороженного мяса, хранившегося при -18 град. C в течение 6 мес. На его основе разработан калибровочный график для определения свежести охлажденного мяса. Установлена возможность применения мультисенсорных систем для идентификации сроков хранения СВ, что позволит проводить экспресс-анализа качества мясной продукции при входном контроле на перерабатывающих предприятиях, в лабораториях, на рынках и т.д.
