Effect of antioxidants succinic acid and emitsidin on amino acid composition of broiler meat | Влияние антиоксидантов янтарная кислота и эмицидин на аминокислотный состав мяса цыплят-бройлеров

English. By analogy 3 groups of one day old broiler chickens were formed (30 chickens in each group). The chickens of group 1 served as a control (received only the basic ration), the chickens of group 2 received the basic ration with the addition of succinic acid, and the chickens of the 3 group received the basic ration with the addition of the drug emicidin. In the 39-day-old all experimental chickens were killed. The amino acid composition and the biological value of meat of the broiler chickens were defined. It was found that thigh muscle protein contains 18 amino acids, 10 of which are essential. The studied drugs improved the biological value of meat. An increase in the content of essential amino acids in the proteins of the muscle tissue of broiler chickens of experimental groups relative to that of control (their total number was more on 5,4–9,0 %) was observed (for some acids an increased was 3.9-19.6%). In the experimental groups a ratio of the content of essential amino acid to dispensable ones was higher by 2.8-9.0. In the groups of chickens fed with emicidin as for protein quality parameters the animals of the experimental groups exceeded the control, especially the group 3 chickens received the basic ration with the addition of emicidin.

Russian. По принципу аналогов были сформированы 3 группы суточных цыплят-бройлеров по 30 гол. Первая группа служила контролем (получала только основной рацион), во 2-й гр. в рацион добавляли янтарную кислоту, а 3-я гр. получала препарат эмицидин. В возрасте 39 сут произвели убой всей подопытной птицы. Был определен аминокислотный состав мяса цыплят и его биологическая ценность. Установлено, что белок бедренных мышц содержит 18 аминокислот, 10 из которых незаменимые. Изучаемые препараты способствовали улучшению биологической ценности мяса. Наблюдалось увеличение содержания незаменимых аминокислот в белках мышечной ткани цыплят опытных групп по отношению к показателям контроля (их суммарное количество было больше на 5,4–9,0%, а по отдельным кислотам увеличение составляло 3,9-19,6%). В опытных группах отношение содержания незаменимых аминокислот к заменимым было выше на 2,8–6,5 %. По показателю качества белка животные опытных групп также превосходили контроль, особенно цыплята 3-й гр., в рацион которых вводили эмицидин.
