An experiment with male lambs of Bulgarian Dairy Synthetic Population was carried out in the Institute of Animal Science- Kostinbrod. The lambs were divided in three groups according to the protein source in their diet- sunflower meal, rapeseed meal and dry distillers grain with soluble DDGS. The fatty acid composition of m. longissimus dorsi was determined and the oxidative alterations of the muscle was analyzed by quantifying the thiobarbituric acid reactive substances TBARS during refrigerated storage for 24 h, 48 h and 6 days as well as after thermal heating at 100°С after 30, 45 and 60 minutes. Significant effect of the diet was observed on the lipid profile of the muscle, mainly on the polyunsaturated linoleic P0.05 and linolenic P0.01 fatty acids. The inclusion of DDGS lead to higher content of linoleic acid, and that of the rapeseed meal augmented the amount of the linolenic acid P0.05. We observed significant influence of the diet P0.001 on the values of the ratio n-6/n-3 polyunsaturated fatty acids, which are highest in the group fed DDGS. No significant differences in the TBARS amounts were found during the storage whereas after thermal heating we observed discrepancies in their contents between the groups fed rapeseed meal and DDGS P0.05. The longer the storage, the higher extent of lipid oxidation was observed but no such effect was found when concerning thermal heating.
