In the conditions of the Republic of Belarus there were presented results of a comparative research into the phenol complex of a group of spicy aromatic plants growing in the collection of the Central Botanical Garden of NAS of Belarus. Objects of researches were representatives of Lamiaceae and Apiaceae: pepper mint (Mentha piperita L.) of Ocharovanie variety, common origanum (Origanum vulgare) of Greta variety, common balm (Melissa officinalis) of Zarya a variety, Ocimum basilicum, sea parsley of Svitanok variety, field caraway (Carum carvi L.) of Korona variety, coriander of Letnij briz variety. As a result the original basic information concerning accumulation of polyphenols substances of perspective representatives of Lamiaceae and Apiaceae is obtained. The research data made it possible to select varieties with the highest total capacity of phenol acids and phenol compounds of vegetable raw material.
