Economic study of milk production and consumption in Egypt.

The importance of milk due to its easy to digest and it is cheaper than any food even with it in the nutritional value and the increasing in consumption increases the bodies immune from the risk of diseases, and despite the importance of milk production is available in Egypt, it is not enough to the needs of the growing population, The study aimed to identify the different aspects of the economics of dairy production and consumption in Egypt in addition to identify the pattern of milk consumption suef on a nation and Beni governorate. The study includes four chapter in addition to the summary in Arabic and English one, dealing with the first section review of previous reference for the most important studies and research, while the second chapter views of the development of dairy production in Egypt, that showing the statistical estimation of production functions for milk on the national level that shows that the best groups of producing milk is the third category, which is the appropriate economic size of the production of Milk .Therefore the third chapter deals with the consumption of milk in Egypt, that included two section, the chapter explained the demand determinants for consumption in Egypt that showing the most important determinants of the demand for dairy consumption in Egypt farm price, and the number of cattle production milk in addition to the forecasting for consumption per capita and national consumption in Egypt during the period (2012-2020) that showing the increasing consumption per capita of milk in Egypt from 77.9 kg in 2012 to about 91.7 kg 2020, with growth rate of about 1.8%, while total national consumption from 6.7 million tons in 2012 to about 8.87 million tons in 2020 with growth rate of about 3.2%, therefore chapter ll dealing with the statistical estimation for expenditure functions of milk in rural and urban Egypt, that showing that spending elasticity in rural and urban Egypt about 1.2 and 1.4 respectively, for the year 2010 that means the milk is not necessary, which means improvement in consumer taste the countryside, and the direction of the state to take food policy correct about the import of products dairy different to meet consumption need for the year 2010, compared to family Budget research in 2005, in became clear that the transmission function spending power to the highest impact of urbanization, which means that the total spent on food in urban than rural areas through research spending and income for 2005-2010. While the fourth section dealing with economic analysis of milk production in Beni Suef. that included three chapters, the first covered of the study sample, the second concerned with the statistical estimation for production functions, and cost function of dairy sample study that studying the production functions in the long run that estimates the productivity elasticity of the factors the of production used in production function to dairy farming sample study of elasticity explained that is less than one, any produce in the second phase, a phase of economic development , and calculates the total, productivity elasticity of the factors used in function production turns out there are some farms producing milk produced in the first stage of production and this means that the productive variable is disabled and must be exploited best use even produce farms this category in the economic phase, such as farms the first category of cows mixture and buffalo centers in Ahnasia and Wasti, while there are farms produce at the beginning of the second stage and still factors of production code in the production process, such as farms category first and second for cows municipal centers in the sample, and the study of costs functions, in short and long term for the dairy cattle of all kinds ( cattle municipal, and foreign, and the mixture ) in the central Ahnasia and Wasti sample study in the province of Beni Suef show low marginal costs increase capacities in production, which indicates that the third category is the most appropriate categories in production and this is consistent with the economic logic. The third chapter included statistical analysis of the consumption of milk in Beni Suef, the most important determinants of the demand for consumption of milk in the Beni Suef governorate show that are (the farm price, and the number of Cattle producing Milk), in addition to the forecasting for consumption per capita in Egypt and national consumption during the period ( 2012-2020), that show increasing in consumption per capita of milk from about 70.19 kg in 2012 to about 78.88 kg in 2020 with growth rate about 1.2%, while the Beni Suef consumption is increasing from 199.1thousand tons in 2012 to about 270.3 thousand tons in 2020. With growth rate is about 3.6%.
