Le fractionnement par chromatographie d’interaction hydrophobe des gliadines a montré que celles d’un blé dur de bonne qualité (variété « Agathe ») sont globalement plus hydrophobes que celles d’un blé dur de mauvaise qualité (variété « Durtal »). Des gliadines qui possèdent la même mobilité électrophorétique et d’autres connues pour être liées à la qualité diffèrent par leur hydrophobicité de surface selon la variété. Une liaison fonctionnelle, et non pas seulement génétique, entre la composition en gliadines des variétés de blé dur et leur qualité est donc possible.
Show more [+] Less [-]English. Hydrophobic interaction chromatography was applied to the fractionation of gliadins of two varieties of Triticum durum wheats. It was shown that the gliadins of the good cooking quality wheat (variety « Agathe ») were more hydrophobic than those of the poor quality wheat (variety « Durtal »). Some gliadins of both varieties with the same electrophoretic mobility and other gliadins known as markers of the quality, have different surface hydrophobicity depending on the variety. The composition of the gliadins could then be related to the cooking quality of Triticum durum wheats, not only genetically but also through their functional properties.
