Physico-chemical changes in soybean oil during germination

The study evaluated the physic-chemical changes in soybean oil at various stages of germination. Soybean seeds were tested for viability, surface sterilized and germinated for a total of 7d. The maximum oil content of ungerminated soybean seed is 16.43 g. The oil content of decreased to 2.73 g on the 7th day of germination, representing approximately 83% loss, which suggests that most of the oil was utilized during germination. During germination, there was a non-significant (p70.05) decrease in the value (1.4819 to 1.4709) of refractive index. A significant (P 0.05) increase in acid value (1.31 plus or minus 0.03 to 78.32 plus or minus 0.29 mg of KOH/g of oil) was observed at the 5th, 6th and 7th stages. There was a steady decrease in saponifiable oil (198.22 plus or minus 1.322 to 164.092 plus or minus 3.711 mg of KOH/g of oil) as well as iodine value (110.403 plus or minus 1.036 to 81.216 plus or minus 1.269 mg of iodine/100 mg of oil). The physicochemical characterization of the soybean oil showed that its suitability for edible use decreased with germination.
