Elderberry is a valuable raw material with many nutrients and bioactive substances. In he literature, the issues are not well developed, studying the chemical composition and the safety performance of elderberry fruit to use as a raw fruit juice products; not studied the principles of stor- age of raw materials on an industrial scale, there are no clear criteria for determining the efficiency and output quality fruit juice products in the technological processing of raw elderberries.
