The study of nitrate concentration in vegetable crops in varamin

Nitrate content is one of the most important factors for assessment of vegetables quality. The compliance of maximum permitted level of nitrate in vegetables is so important for consumer health. This study was conducted to determine and evaluate nitrate content in vegetables of Varamin, Pishva, Pakdasht and Gharchak zone at 2011.The vegetable crops were in three groupsleafy vegetables, roots (tubers) vegetables, and fruit vegetables. Twelve species of leafy vegetables, six species of fruit vegetables and two species of root vegetables that were videly cultivated in this rigion were selected for this experiment. Nitrate contents were analyzed in the samples by spectrophotometry method and the results were compared with maximum permitted level by T -test. Results showed that the levels of nitrate in vegetables were in root vegetables, leafy vegetables and fruit vegetables with averages of 2580, 1470 and 337 mg per kg of fresh weight respectivly.Table beet had the highest nitrate concentration with 3241 mg of nitrate per kg fresh weight. In leafy vegetables, lettuce had the highest nitrate concentration with a mean of 3909 mg per kg fresh weight. Tomato fruit with 223 mg per kg had the lowest average of nitrate content.
