Walnut processing consists of several stages such as shelling, drying, sorting and cracking. Drying is most important part in this process. The harvested walnut has moisture content of 30% which compare to the safe storage moisture content of 80%, is relatively high, and it cause to reduce the quality of the product, one common way to prevent such loss is to reduce the moisture content by proper drying Air drying is traditional way to dry the walnuts, which is time consuming and reduce the quality. In this study we have designed a mechanized equipment to reduce the moisture Designed dryer has the following specification: Inner Volume: 10.2 m3 Depth : 3 m Drying Period: 12.5 hr Key words: Walnut, processing
