In the conditions of the Republic of Belarus there were presented results of a complex study of processing products of autumn raspberry (Rubus idaeus) (directly squeezed juice, nectar without pulp, nectar with pulp and bulk frozen fruits) of the varieties Babje leto, Gerakl, Rubinovoye ozherelje, Polka. The character of size and mass of raspberry berries, organoleptic indicators, soluble dry matters and juicy ability of frozen fruits were defined. As the result fruits suitability of studied raspberry varieties for manufacturing of various processing products was established. Among the studied samples of the remontant raspberries, the variety Polka showed higher indexes than other samples with the average weight (4.8 g), height (23.2 mm) and diameter (22.0 mm) of the fruit. Hercules had the highest grade juice- keeping capacity (0.4%). Soluble solids content in the processed products of the studied raspberry varieties met the requirements of STB and was as follows: in the juice directly squeezed 9,0-11,5% in the nectar without pulp - 10.0 -10.7% in the nectar with pulp - 8,7-10,2% in fruits, frozen in bulk - 9,5-11,4%.
