The article presents the results of research into the effect of somatic cell count on milk composition and its processing properties. It has been established that for healthy cows exceeding physiological norm of somatic cell count in milk leads to the ton-ing, reducing lactose, solids and nonfat milk solids. At the same time it causes increase in protein content as well as deterioration in milk fat globule distribution. Research has shown consistent reduction in diameter of fat globules in the bovine milk containing in-creased count of somatic cells
