Химический состав и товарно-технологические показатели говядины двух-трёхпородных бычков | Chemical composition and commodity-technological indices of beef from double- and triple-cross steers

Russian. Изучали влияние генотипа бычков и возраста забоя на свойства говядины. Изучали двухпородный помесной молодняк (голштин x симментал) и трехпородный (3/8 голштин x 1/8 симментал x 1/2 или салерс, или лимузин, или обрак. Установлено, что нормально протекающие процессы в организме подопытных животных способствовали проявлению достаточно высоких мясных качеств, характерных для определённого генотипа бычков разного возраста реализации их на мясо. Изучен химический состав средней пробы мяса-фарша. В мясе бычков, забитых в возрасте 18 мес., независимо от генотипа повысилась доля сухих веществ на 1,32-2,20% по сравнению с мясом бычков, забитых в 15 мес. Содержание жира за эти 3 месяца повысилось в средней пробе трёхпородных помесей на 2,46-2,86%, двухпородных - на 1,86%. В мякоти у 18-месячных трёхпородных бычков содержалось жира больше, чем у двухпородных сверстников. По уровню накопления в мясе белка определённых различий между животными разных генотипов не выявлено. Соотношение между белком и жиром в мясе-мякоти туш 15-месячных бычков находилось в пределах 2,57-2,84:1, что в пересчёте в энергетические единицы составляет 1,11-1,55:1. Данный показатель ниже требований, согласно которым эта пропорция должна быть близкой к 1:1. Этому требованию удовлетворяла говядина 18-месячных бычков, когда соотношение белка и жира в ней в пересчёте на энергетические единицы варьировало у бычков разных генотипов в пределах 0,77-0,97:1. У трёхпородных бычков было более светлое мясо, пользующееся повышенным спросом у потребителей. Говядина 18-месячных трёхпородных помесных бычков имела преимущество также по мраморности и нежности мяса.

English. The influence of the genotype of steers and slaughter age on the beef properties was influence. Two-cross young hybrids (Holstein x Simmental) and three-cross young hybrids (3/8 Holstein x 1/8 Simmental x 1/3 Salers, or Limousin, or Aubrac. It is established that the processes normally proceeding in the animals' body contributed to manifestation of rather high beef qualities being typical for the certain genotype of steers of different age to be marketed for beef. The chemical composition of an average farce-meat specimen was studied. In the meat of steers slaughtered at the age of 18 months irrespective of the genotype the share of dry matter has increased by 1.32-2.20% compared to the meat of steers slaughtered at the age of 15 months. the fat content for this 3 months in the average specimen of triple-cross hybrids increased by 2.46-2.86% and in two-cross hybrids by 1.86% (Simmentals x Holsteins) for the period of three months. It is pointed out that the content of fat in 18 months old three hybrids was higher than that in two-cross hybrids. There was not observed any significant differences in protein content in animals of different genotypes. The ratio of protein and fat in meat-flesh of steers aged 15 months was within 2.57-2.84:1, which in energetic units was 1.11-1.55:1. This is lower than the standard requirements which are to be about 1:1. Beef obtained from 18 months-old steers of different genotypes, in which the ratio of protein and fat in terms of energetic units varied within 0.77-0.97:1.three cross steer hybrids had lighter meat which is in demand of consumers. Beef of 18 months old three-cross hybrid steers was superior in meat marbling and tenderness.
