Модификация свойств пшеничной клетчатки совместным действием ферментации и электрического тока | Modification of the wheat fiber properties by joint enzymes and electric current processing

Russian. Экспериментально доказана эффективность применения низкоинтенсивной электроконтактной (ЭК) обработки для усиления ферментативного гидролиза растительной клетчатки (КЛ) при целенаправленной модификации ее свойств. Модификации подвергали пшеничную КЛ "Витацель WF 200", используемую в качестве наполнителя в производстве мясных продуктов. Ферментацию проводили обладающим цитолитической активностью препаратом BGGlukanaseComplex (торговая марка LAMINEX), разбавленным до концентраций 0,1 и 0,05 %. ЭК-обработку осуществляли пропусканием через гидратированную КЛ переменного тока при частотах 200 и 5000 Гц и удельной мощности 10E-4 Вт/кг на начальной стадии ферментации. Приведено сравнение функционально-технологических свойств нативной КЛ, КЛ после ферментации и КЛ, модифицированной совместным действием фермента и электрического тока (МКЛ). Показано положительное влияние ЭК-обработки на ход ферментативного процесса. МКЛ значительно превосходит нативную КЛ по таким показателям как степень набухания (751-831% против 580%) и водосвязывающая способность (98,8-99,5% против 93,3%). Предпочтительнее использовать воздействие переменным током частотой 5000 Гц. Полученная таким способом МКЛ является более эффективным наполнителем, введение которого в мясной фарш в количестве 1-4% приводит к значительному улучшению функционально-технологических свойств фарша. Возрастают водосвязывающая способность (с 75,8 до 79,9-87,9%), массовая доля влаги (с 71,0 до 72,9-77,3%) и липкость (с 0,067 до 0,070-0,081 г/см3), что обеспечивает повышение качества продукции и позволяет экономить дорогостоящее мясное сырье за счет большего выхода готового продукта. Использование МКЛ позволяет увеличить дозу вводимого наполнителя без ухудшения консистенции, вкусовых и ароматических свойств мясных продуктов.

English. Experimentally the effectiveness of low-intensity electrocontact (EC) treatment to enhance vegetative fiber enzymatic hydrolysis in order to modify their properties has been proved. Used as a filler in the manufacture of meat products wheat fiber "VITACEL WF 200" was subjected to modification. The fermentation was carried out by enzymatic preparation LAMINEX BGGGlukanase Complex with a cytolytic activity, which was diluted to concentrations of 0.1 % and 0.05 %. EC treatment was performed by passing through the hydrated alternating current wheat fiber at frequencies 200 Hz and 5000 Hz and the power density 10E–4 W/kg at the initial stage of fermentation. The comparison of the functional and technological properties of native wheat fiber, wheat fiber after fermentation and wheat fiber, modified by joint effect of the enzyme and electric current was conducted. Shown is а positive effect of the EC treatment on the fermenting process. The modified fiber greatly exceeds the native wheat fiber by such indicators as the degree of swelling (751-831% against 580%) and water binding capacity (98.8-99.5% against 93.3%). It is preferable to use exposure to alternating current with frequency of 5000 Hz. The thus obtained modified fiber is a more effective filler. The introduction of this filler into the mincemeat in an amount of 1-4% leads to a significant improvement of the mincemeat functional and technological properties, especially such as water binding capacity (from 75.8 to 79.9-87.9%), moisture content (from 71.0 to 72.9-77.3%) and stickiness (from 0.067 to 0.070-0.081 g/cub. cm). It is very important for meat technology because it to give the possibility to product quality improved and to saves costly raw meat due to increase of finished product outlet, which allows improving the quality of products and saving expensive meat for processing due to a great yield of finished product. The use of modified fiber allows increasing the dose of a filler to be introduced without worsening the consistency, flavor and aromatic properties of meat products.
