Разрабатывали рецептуры и технологии тонизирующих напитков (ТН), содержащих растительные адаптогены. В качестве сырья, обладающего адаптогенными свойствами, были выбраны плоды лимонника китайского, рябины обыкновенной, актинидии коломикты, расторопши пятнистой, трава эхинацеи пурпурной, володушки золотистой, корни и корневища родиолы розовой и элеутерококка колючего, цветы липы. Анализ показал высокое содержание биологически активных веществ, подлинность, доброкачественность и безопасность выбранного растительного сырья. Для получения экстрактов использован процесс мацерации. Определены наиболее значимые факторы, влияющие на качество экстракции, и их оптимальные значения: температура экстрагента - 85 град. С

hydromodule - 1:15. Development of the formulas of 12 samples of SD based on berry juices and extracts of medicinal and technical raw materials was done. Physical and chemical indices of the SD samples having the highest points during the organoleptic evaluation were studied. The technological scheme of SD production was developed. Preventive efficiency estimation of the developed SD was carried out in clinical trials on laboratory white rats. The obtained data show that addition of the developed SD to the main diet against the cold and heat stress background provided the increase of morphological and biochemical values in all development groups in comparison with the control by the end of the experiment. The content of the general calcium in blood increased by 2.2%, and iron - by 6.6% in comparison with the control group. The developed SD are recommended to use as the prophylactic ones, as they increase the human body’s adaptive response to low and high temperatures.

English. The formulas and technologies of production of soft drinks (SD) containing herbal adaptogens, were developed. Fruits of the Chinese magnolia vine, field ashes, actinidia kolomikta, holly thistle, and grass of the purple echinacea, golden harem, roots and rhizomes of the rhodiola rosea and spiny eleuterococus, lime-tree flowers were chosen as raw materials with adaptogenic properties. The analysis showed the high content of biologically active agents, authenticity, high quality and safety of the chosen plant raw materials. A maceration process was used to obtain extracts. The most significant factors having impact on quality of the extraction process were determined and their optimal values are: temperature of an extragent - 85 deg C

гидромодуль - 1 : 15. Разработаны рецептуры 12 образцов ТН на основе ягодных соков и экстрактов лекарственно-технического сырья. Исследованы физико-химические показатели образцов ТН, получивших наивысший балл при органолептической оценке. Разработана технологическая схема производства ТН. Проведена оценка профилактической эффективности разработанных ТН в клинических исследованиях на лабораторных белых крысах. Полученные данные свидетельствуют, что добавление разработанных ТН к основному рациону на фоне холодового и теплового стресса обеспечило к концу опыта повышение по морфологическим и биохимическим показателям во всех опытных группах по сравнению с контролем. Содержание общего кальция в крови увеличилось на 2,2%, железа на 6,6% по сравнению с контрольной группой. Разработанные ТН рекомендовано употреблять как профилактические, т.к. они увеличивают адаптационные возможности организма человека к влиянию низких и высоких температур. (Табл. 9. Ил. 3. Библ. 11.)
