English. Technology of cereal breakfast with legume and walnut raw materials grown in the Kyrgyz Republic is researched and worked out. The chemical composition of the bean and nut crops, the content of vitamins and minerals in the protein products of nuts are investigated. New possibilities of using walnut fruits and legumes for protein food of high biological value and create a new range of products are revealed and identified.

Исследованы химический состав бобовых и ореховых культур, содержание витаминов и минеральных веществ в белковых продуктах из орехов. Выявлены и определены новые возможности использования ореховых плодов и бобовых культур для получения белковых продуктов питания высокой биологической ценности и создании нового ассортимента изделий.
