Isolation and characterization of bacteria producing acetic acid

English. Natural products, in particular vinegar, represent popular trend in food industry. Natural acetum contains not only acetic acid, but also mineral substances, micronutrients, organic acids, enzymes and amino acids, aldehydes and compound esters. However, producing of natural product appears rather difficult problem due to high sensibility of acetic bacteria Acetobacter to oxygen content in fermentative medium. Therefore, improvement of bacteria-producers of acetic acid and development of national collection of acetic bacteria appears an important scientific problem. The article deals with creation of strains of acetic acid bacteria with high speed of acid synthesis. Elective conditions have been selected in order to ensure effective allocation of acetic acid bacteria. From grape berries, apples, red currant and malt have been allocated 22 strain of acetic acid bacteria, which include representatives of the genera Acetobacter and Gluconobacter. Among the isolates there have been found 3 strains with higher acetic acid production. Among them - the strain Acetobacter sp. Vin 3.3, which is superior in comparison to the collection industrial strain A. acetic N in productivity.

Цель работы – выделение из объектов окружающей среды штаммов уксуснокислых бактерий с высокой скоростью синтезирования уксусной кислоты, генетические детерминанты которых могут быть использованы для совершенствования промышленных продуцентов. Подобраны элективные условия, обеспечивающие эффективное выделение уксуснокислых бактерий. Из виноградных ягод, яблок, красной смородины и солода выделены 22 штамма ацетобактерий, включающих представителей родов Acetobacter и Gluconobacter. Среди изолятов обнаружено 3 штамма, характеризующихся высоким выходом уксусной кислоты, в том числе штамм Acetobacter sp. Vin3.3, превосходящий по продуктивности коллекционный промышленный штамм A. aeeti N 1.
