EFFECT OF GENOTYPE ON CARCASS COMPOSITION IN PIGS FED ON A CONVENTIONAL DIET OF MAIZE AND SOYBEAN MEAL | EFECTO DEL GENOTIPO SOBRE LA COMPOSICIÓN DE LA CANAL EN CERDOS ALIMENTADOS CON UNA DIETA CONVENCIONAL DE MAÍZ Y SOYA

Spanish; Castilian. El presente trabajo se realizó con el objetivo de evaluar la composición de la canal en cerdos CC21, Duroc y L35. Se emplearon 84 cerdos machos castrados, alimentados con una dieta convencional de harina de maíz y soya desde los 30 hasta los 95 kg de peso vivo. Los cerdos se alojaron individualmente y fueron distribuidos en un diseño completamente aleatorizado con tres tratamientos y 28 réplicas por tratamiento. No se hallaron diferencias significativas (P0.05) entre genotipos para el rendimiento y el peso de la canal caliente y fría. Los cerdos Duroc mostraron un espesor de grasa dorsal de 12.0 mm, inferior al encontrado en los animales CC21 y L35, 13.3 y 14.1 mm respectivamente. La raza Duroc mostró un contenido magro superior (P0.05) a los individuos CC21 y L35 en aproximadamente dos unidades porcentuales, lo que se correspondió con el área de ojo de chuleta encontrado: 45.7, 43.5 y 43.3 cm2 para los cerdos Duroc, CC21 y L35 respectivamente. Los resultados encontrados demostraron el riguroso trabajo de selección genética realizado en el genotipo CC21 así como los efectos de la importación de cerdos Duroc en el año 2005 de Canadá. Con respecto a la línea L35, se observó un empeoramiento en el contenido magro de la canal, lo que se asoció al estrechamiento que ha existido en su población.

English. The present study was conducted to evaluate carcass composition in CC21, Duroc and L35 pigs. A total of 84 castrated male pigs from 30 to 95 kg live weight, fed with a conventional diet of maize and soybean meal, were used. The pigs were housed individually and were distributed into a completely randomized design with three treatments and 28 replications per treatment. No significant (P0.05) differences between genotypes for yield and weight of the hot and cold carcass were found. Duroc pigs had a backfat thickness of 12.0 mm; lower than that found in the CC21 and L35 (13.3 and 14.1 mm) animals. The Duroc genotype showed a higher lean content (P0.05) with respect to the CC21 and L35 individuals by approximately two percentage units, which corresponded to the loin area found: 45.7, 43.5 and 43.3 cm2 for Duroc, CC21 and L35 pigs, respectively. The results demonstrated the rigorous genetic selection done in CC21 genotype and the effects of the importation of Duroc pigs in 2005 from Canada. Regarding to the L35 line, worsening in the carcass lean content was observed, which was associated to the decrease existing in its population size.
