Methodological base industry monitoring system quality and safety of milk

In course of the research there was analyzed a national practices of milk quality and safety monitoring in the Republic of Belarus. As a result of realized research there were reflected its disadvantages which consisted in the absence of possibility to obtain complete and accurate information about the properties of materials. Proposals for forming industries system of milk quality and safety monitoring, which was based on a comprehensive assessment of its properties, as well as factors contributing to their formation were defined. Thus, the establishment of branch system of milk quality and safety monitoring involved tracking not only the relevant indicators of production, but also the factors of their formation at different stages of production. This provided a possibility of WHO, a comprehensive analysis of the quality and safety of milk provided a complete and accurate assessment of raw materials, depending on the direction of its use (range of products), guaranteed the traceability of milk production process in terms of quality.
