Higher nutritional value of organic beetroots, carrots and carrot juices, as well as the identified trends towards more favourable parameters of sensory, technological and storage quality of organic vs. conventional vegetables allow to make a conclusion that organic agricultural methods provide high quality products. This is caused mainly by the production practices used in organic and conventional cultivation, as shown in the study by significant correlation between the level of nitrogen fertilization on the farm and the chemical composition of vegetable.
