Modelling of meat product quality | Моделирование качества мясной продукции

English. There was studied the degree of an impact of a soy protein preparation (SPP) on the physicochemical and functional-technological properties of a minced meat system and there was developed a mathematical model of the finished product quality depending on the level of meat raw material replacement. The SPP was added in amounts of 5 to 40% to minced meat instead of the meat component. The obtained combined minced meat was assessed by the physicochemical and functional-technological indicators including according to the standard study techniques of meat and meat products pH of minced meat, as well as their moisture and fat-retaining ability were determined. Based on the experimental data, there were built the adequate models describing the changes in these indicators depending on the quantity of SPP added. The regularities are 3-d order parabolas. The experiment has shown that a 10% replacement of meat raw material with the SPP is possible with maintenance of the satisfactory physicochemical and functional-technological indicators of the product. There has been developed a functional structure of the computer system for assessing an effect of new components in emulsified meat products and forecasting their quality, which is based on the structural parametric principles and the structural-mechanical and functional-technological indicators of the initial raw material. It seems possible to predict the quality of the developed product by using the initial data that characterize the composition and properties of raw material and ingredients, establishing the boundary conditions and required levels of the individual indicators and using the system of computer modeling.

Изучали степень влияния соевого белкового препарата (СБП) на физико-химические и функционально-технологические свойства фаршевой системы и разрабатывали математическую модель качества полученной продукции в зависимости от уровня замены мясного сырья. В мясной фарш вносили от 5 до 40% СБП взамен мясной части. Полученные комбинированные фарши оценивали по физико-химическим, функционально-технологическим показателям, в частности, по стандартным методикам исследования мяса и мясопродуктов определяли рН фаршей, а также их влаго- и жироудерживающую способность. По экспериментальным данным были построены адекватные модели, описывающие изменение этих показателей в зависимости от количества внесенного СБП. Закономерности представляют собой параболы 3-го порядка. Эксперимент показал, что допустима замена 10% мясного сырья на СБП с сохранением удовлетворительных физико-химических и функционально-технологических показателей продукта. Разработана функциональная структура компьютерной системы оценки влияния новых компонентов в эмульгированных мясных продуктах и прогнозирования их качества, в которой заложены структурно-параметрические принципы, а также структурно-механические и функционально-технологические показатели исходного сырья. Оперируя исходными данными, характеризующими состав и свойства сырья и ингредиентов, устанавливая граничные условия и требуемые уровни отдельных показателей, с помощью системы компьютерного моделирования можно осуществить прогнозирование качества разрабатываемого продукта.
