The development of temperature conditions of vacuum concoction of milk | Разработка температурных режимов вакуумного концентрирования молока

English. The influence of the temperature of heating on the efficiency of vacuum concoction of milk (skim one and the one with the mass fraction of fat being 3% and 5%) was studied. Concoction of these products was carried out in the chamber at the temperature from 50 to 100 deg C with the interval of 10 deg. It was found that with the increase of concoction temperature and the duration of process there was an increase in the mass fraction of solids from 12-30% to 50-85%. The content of solids in skim milk and the one with the mass fraction of fat of 3% and 5% increases by 5.6, 4.1, 3.6 times respectively. However, at the temperatures of concoction of 90 and 100 deg C the decrease in organoleptic parameters of the product was noted. The best possible point as a result of the organoleptic assessment was 40. The product can get 38–39 points at the concoction temperature being no more than 70 deg C. It was found that there was the increase in specific heat input of the warmth for concoction along with the increase of temperature in the camera, especially sharp one - at the temperature of concoction more than 70–80 deg C. On the basis of the conducted research the rational condition of the process of concoction of objects of research was found. For the concentration of solids of 48–50% it is necessary to condense the milk at the temperature of 70±3 deg C for 5 h. This temperature condition was chosen taking into account organoleptic and physical and chemical indicators, kinetics of the process and specific heat input per kilogram of removed moisture.

Russian. Изучали влияние температуры нагрева на эффективность вакуумного концентрирования молока (обезжиренного и с массовой долей жира 3 и 5%). Концентрирование данных продуктов проводили в камере при температурах от 50 до 100 град. С с шагом в 10 град. С. Обнаружено, что с повышением температуры концентрирования и продолжительности процесса происходит увеличение массовой доли сухих веществ с 12-30% до 50-85%. Содержание сухих веществ в обезжиренном молоке и молоке с массовой долей жира 3 и 5% увеличивается в 5,6, 4,1, 3,6 раза соответственно. Однако при температурах концентрирования 90 и 100 град. С установлено ухудшение органолептических показателей продукта. Максимально возможный балл при органолептической оценке – 40. Продукт может получить 38–39 баллов при температуре концентрирования не более 70 град. С. Установлено, что удельные затраты теплоты на концентрирование возрастают с ростом температуры в камере, причем особенно резко - при температуре концентрирования более 70–80 град. С. На основании проведенных исследований установлен рациональный режим процесса концентрирования объектов исследования. Молоко до концентрации сухих веществ 48–50% необходимо сгущать при температуре 70±3 град. С в течение 5 ч. Данный температурный режим выбран с учетом органолептических и физико-химических показателей, кинетики процесса и удельных затрат теплоты на килограмм удаленной влаги.
