Quality and safety control of meat of broilers | Контроль качества и безопасности мяса птицы

English. Studies were conducted in the Belgorod region on enterprises for bird growing and processing. Critical control points (CCP) of technological process of growing and processing of the carcasses of broiler chickens were shown. It was found that not all risks could harm the health of the consumer, but also the same unacceptable risk could appear at different stages of the process. There are two main CCP: during the evisceration of carcasses and their subsequent cooling. The reasons of deterioration in microbiological indicators of products are possible violations of the technological regime (poor quality of evisceration, too high temperature of the cooling water or air in the department). Analysis of the found risks and use of preventive measures on certain stages of the process can significantly reduce the risks of harming health and reducing quality of products, prevent flaws, reduce the number of CCP. If there is a violation of the critical limits, it is necessary to take corrective actions with their obligatory registration. Thus, the use of the HACCP system contributes to the production of safe and quality products.

Russian. Исследования проведены в Белгородской области на предприятиях по выращиванию и переработке птицы. Рассмотрены критические контрольные точки (ККТ) технологического процесса выращивания и переработки тушек цыплят-бройлеров. Установлено, что не все риски могут приносить вред здоровью потребителя, но одновременно один и тот же недопустимый риск может возникать на разных стадиях процесса. Выделены 2 основные ККТ: при потрошении тушек и их последующем охлаждении. Причины ухудшения микробиологических показателей продукции – возможные нарушения технологического режима (низкое качество потрошения, слишком высокая температура охлаждающей воды или воздуха в помещении цеха). Анализ выявленных рисков и использование предупреждающих воздействий на определенных стадиях процесса может существенно снизить риски причинения вреда здоровью и снижения качества продукции, предупредить возникновение брака, сократить количество ККТ. Если же произойдет нарушение критических пределов, то необходимо осуществлять корректирующие воздействия с обязательной их регистрацией. Таким образом, использование системы НАССР способствует выпуску безопасной и качественной продукции.
