Content of stable isotopes of carbon and nitrogen in muscle tissue of the cattle fattened in different areas of the Zabaikal region | К вопросу о содержании стабильных изотопов углерода и азота в мышечной ткани крупного рогатого скота, выращенного в различных районах Забайкалья

English. The stable isotope analysis is one of the detection methods of falsification of the geographical origin of food, including meat products. The aim of this work was to evaluate the isotopic composition of meat of large horned cattle (LHC), pasture vegetation and soil. There was done the analysis of the content of carbon and nitrogen stable isotopes in the samples of cattle meat obtained from 8 districts of the Baikal region, carbon isotopes in grass and soil selectively of the 3 districts. The content of stable isotopes in the studied objects was determined by preparing samples by drying to constant weight and for research on a mass spectrometer Finnigan Delta V Plus. The results of measurements were leaded to the standard Pee Dee Belemnite (PDB). The analytical error of the isotopic composition is not more than 0.3 promille. Studies have shown that the content of stable carbon isotopes in the meat of cattle is from minus 24.28 to minus 25.84 promille. In this case, the ratio of carbon isotopes is less of 24.0 ppm in the studied and standard samples, which corresponds to the meat grown under local conditions. The contents of stable isotopes of nitrogen ranged from 5.85 to 7.84 promille. This indicates use of mostly natural food. The content of stable isotopes of carbon in the herbs and the soil was (from minus 27.16 to minus 27.86) and (from minus 24.57 to minus 26.12) promille, respectively. The research results showed the relationship of the isotopic composition of muscle tissue of the meat from different parts of the Baikal region with isotopic composition of herbs, growing in these areas and serve as food for cattle. A statistically significant correlation, which indicates the presence of the "isotopic signature" on the food chain, also revealed a decrease in the content of stable carbon isotopes in the muscle tissue on average at 2.79 promille compared to their average value in the vegetation of pastures.

Russian. Одним из методов выявления фальсификации географического происхождения пищевых, в том числе мясных продуктов, является анализ содержания стабильных изотопов (ССИ). Целью работы являлась оценка изотопного состава мяса крупного рогатого скота (КРС), пастбищной растительности и почвы. Проведен анализ ССИ углерода и азота в образцах мяса КРС, полученного из 8 районов Забайкалья, изотопов углерода в травах и почвы выборочно из 3-х районов. ССИ в исследуемых объектах определяли путем подготовки проб высушиванием до постоянной массы и для исследования на масс-спектрометре Finnigan Delta V Plus. Результаты измерений приведены к стандарту Pee Dee Belemnite (PDB). Аналитическая погрешность определения изотопного состава – не более 0,3 промилле. Исследования показали, что ССИ углерода в мясе КРС составляет от минус 24,28 до минус 25,84 промилле. При этом соотношение изотопов углерода в исследуемых и стандартных образцах составляет минус 24,0 промилле, что соответствует мясу, выращенному в местных условиях. ССИ азота составило от 5,85 до 7,84 промилле. Это указывает на использование преимущественно натурального корма. В травах и почве ССИ углерода составило от минус 27,16 до минус 27,86 и от минус 24,57 до минус 26,12 промилле, соответственно. Результаты исследований показали связь изотопного состава мышечной ткани мяса из разных районов Забайкалья с изотопным составом растений, произрастающих в этих районах и служащих кормом для КРС. Выявлена корреляционная связь, которая указывает на наличие "изотопной подписи" по трофической цепи; также установлено снижение ССИ углерода в мышечной ткани в среднем на 2,79 промилле по сравнению с их средним значением в растительности пастбищ.
