The aim of the research was to study the dynamics of active and titratable acidity with a low and high initial titer, while cultivating white head cabbage of the variety 'Parus' with lactic acid bacteria Leuconostoclactis VKPM V-12150 and Leuconostocmesenteroides subsp. mesenteroides VKPM V-8818 in the basic model medium (BMM) and the modified model medium (MMM) during fermentation. To compare, the starter cultures of the Leuconostoc genus of species Leuconostoc lactis VKPM B-12150 and Leuconostoc mesenteroides subsp. mesenteroides VKPM B-8818 were used.In the experiment, two important questions were considered: the creation of favorable conditions for the growth of lactic acid microorganisms and the suppression of undesirable pathogenic microflora, which can eventually lead to product spoilage. One of the key questions is to scale the results of studies related to the fermentation of plant objects by microorganisms on initially non-sterile raw materials that is the requirement to create as possible fast the conditions that restrain the reproduction of Cl. botulinum, preventing botulinum toxin accumulation in the product. Therefore, an important factor is the observance for the necessary boundary condition where for the international standards, it reaches pH not more than 4.6, and for the Russian standards it reaches pH not more than 4.2. An analysis of the experimental data showed that these boundary conditions were reached after the expiration of essentially different time intervals (from less than 1 to 4 days) during the cultivation of microorganisms with different starting titers. he The optimal parameters for the dynamics of active and titratable acidity were achieved, when the boundary condition reached pH 4.2 by cultivating lactic acid microorganisms L. mesenteroides in the MMMprovided that that the values of the starting titer range from 3*10E3 to 3*10E5 CFU/g.

Задачей исследований являлось изучение динамики активной и титруемой кислотности с низким и высоким стартовым титром при культивировании капусты белокочанной сорта Парус молочнокислыми бактериями в базовой модельной среде (БМС) и модифицированной модельной среде (ММС) в процессе ферментирования. Для сравнения использовали стартерные культуры рода Leuconostoc видов Leuconostoc lactis ВКПМ B-12150 и Leuconostoc mesenteroides subsp. mesenteroides ВКПМ B-8818. В эксперименте были рассмотрены два важных момента: создание благоприятных условий для роста молочнокислых микроорганизмов и подавление нежелательной патогенной микрофлоры, которая в итоге может привести к порче продукта. Одним из ключевых моментов при масштабировании результатов исследований, связанных с ферментированием растительных объектов микроорганизмами, на изначально нестерильное сырье является требование максимально быстрого создания условий, препятствующих размножению Сl. botulinum и предотвращения накопления в продукте ботулинического токсина. Поэтому важным фактором является соблюдение необходимого граничного условия: по международным нормам это достижение рН не больше 4,6, а по российским –достижение рН не больше 4,2. Анализ экспериментальных данных показал, что данные граничные условия были достигнуты по истечении существенно различающихся временных интервалов (от менее 1 до 4 сут) при культивировании микроорганизмов с разным стартовым титром. Оптимальные показатели по динамике активной и титруемой кислотности при достижении граничного значения рН 4,2 достигаются при культивировании молочнокислых микроорганизмов L. mesenteroides в ММС при условии, что значения стартового титра находятся в пределах от 3*10E3 до 3*10E5 КОЕ/г.
