Influence of the enriched kefir products on enterobakteria development | Исследование влияния обогащенных кефирных продуктов на развитие энтеробактерий

English. Functional fermented milk products are recommended for acute intestinal infection prophylaxis. It helps to restore good intestinal microflora. There was developed the technology of fermented milk bioproducts that contain probiotics (bifidobacteria B. bifidum, B. longum, B. breve), lactulose as prebiotic and immunoglobulin "Lactoglobulin against Potentially Pathogenic Bacteria and Salmonella". These products can not only restore "friendly" bacteria (lakto- and bifidobacteria) in intestine, but also suppress development of potentially pathogenic microflora. The enriched kefir drinks influence on bacteria of Enterobacteriaceae family has been evaluated. The method of comparing the developing mixed populations with the growth of the test strain in a monoculture based on liquid nutrient mediums with further inoculation on the solid nutrient mediums was used. It was established the ability of the enriched kefir bioproducts to inhibit the development and multiplication of bacteria of the family Enterobacteriaceae, namely Salmonella typhimurium, Proteus mirabilis No. 878 (035), Escherichia coli 3912/41, Shigella sonnei (S-form) at simultaneous incubation on the solid mediums within 24 hours at t 37 deg C. It was demonstrated that kefir products enriched with lactulose (which stimulates growth and development of bifido- and lactobacteria, that are present in the kefir drink and have antagonistic effect on enterobacteria) and immunoglobulin "Lactoglobulin" (which has antibodies to the potentially pathogenic bacteria and salmonella) are most capable of suppressing the development of pathogenic and potentially pathogenic enterobacteria, inhibiting their growth and multiplication, in comparison with the reference sample. The obtained results allow to assume that the developed products can be used to prevent and correct the negative changes in intestinal microflora and dysbiotic complications including acute intestinal infections caused by the representatives of the family Enterobacteriaceae.

Russian. Для профилактики острых кишечных инфекций рекомендуется использовать функциональные кисломолочные продукты, способствующие восстановлению нормальной микрофлоры кишечника. Разработана технология кисломолочных кефирных биопродуктов (КБП), содержащих в своем составе пробиотики (бифидобактерии B.bifidum, B.longum, B.breve), пребиотик лактулозу, а также иммуноглобулин "Лактоглобулин против условно-патогенных бактерий и сальмонелл". Данные продукты способны не только восстанавливать "дружественные" бактерии (лакто- и бифидобактерии) в кишечнике, но и подавлять рост условно-патогенной микрофлоры. Оценивали влияние обогащенных КБП на представителей сем. Enterobacteriaceae методом развивающихся смешанных популяций в сравнении с ростом тест-штамма в монокультуре на жидких питательных средах с последующим высевом на плотные питательные среды. Установлена способность КБП ингибировать рост и размножение Salmonella typhimurium, Proteus mirabilis № 878 (035), Escherichia coli 3912/41, Shigella sonnei (S-форма) при совместном инкубировании на плотных питательных средах в течение 24 ч при 37 град. С. Наибольшей способностью оказывать подавляющее действие на развитие патогенных и условно-патогенных энтеробактерий, замедляя их рост и размножение по сравнению с контрольным образцом, обладают КЬП, обогащенные лактулозой (стимулирующей рост и развитие бифидо- и лактобактерий, содержащихся в кефирном продукте и оказывающих антагонистический эффект по отношению к энтеробактериям) и иммуноглобулином "Лактоглобулин", который обладает антителами к условно-патогенным бактериям и сальмонеллам. Разработанные продукты могут применяться с целью профилактики и коррекции нарушений кишечной микрофлоры и дисбиотических нарушений, в том числе и острых кишечных инфекций, вызываемых представителями семейства Enterobacteriaceae.
