About the monitoring of the cold chain of a meat-processing plant | О контроле холодильной цепи производственного мясоперерабатывающего предприятия

English. The critical control points (CCP) were selected and analyzed according to the operations and inter-operation circulation areas at a meat processing enterprise indicating the main parameters of controlling the cooling environment and products. In the slaughterhouse 3 CCP were installed: electrostimulation (CCP1); "wet cleaning" (CCP2); quality control of meat (CCP3). In CCP12 the current parameters are controlled; in CCP2 – temperature and water draining time, in CCP3 – pH, temperature and appearance of meat; during transferring from the slaughterhouse to the refrigerator acceptance weighing is carried out (CCP4). In the refrigerator 7 CCP were installed: a discharging corridor (CCP5, passage time is controlled); a food wrap applying area (CCP6); a hydro-aerosol treatment chamber (CCP7); cooling and freezing chambers and runnels (CCP8); cooled meat stores (CCP9), frozen meat stores (PPC10); dispatch room (CCP11). In the meat processing room 1 CCP is installed (CCP12). CCP6-CCP12 control air and meat temperature, air moisture and its movement speed, cooling speed, residence duration of meat at the object. According to the results of the current and technical monitoring of the CCPs of the cool chain of meat processing enterprises preventive corrective actions are undertaken to eliminate potential and revealed risks or to reduce their level to the admissible one. Thus, a single methodical and organizational approach to providing the quality of artificial cool technologies throughout the way of product movement – from production to consumer.

Подобраны и проанализированы контрольные критические точки (ККТ) по операциям и межоперационным участкам движения мяса на мясоперерабатывающем предприятии с указанием основных параметров контроля охлаждающей среды и продукции. В убойном цеху установлено 3 ККТ: электростимуляция (ККТ1); "влажная зачистка" (ККТ2); контроль качества мяса (ККТ3). В ККТ1 контролируются параметры тока, в ККТ2 – температура и время стекания воды, в ККТ3 – pH, температура и внешний вид мяса. При передаче из убойного цеха в холодильник осуществляется приемно-сдаточное взвешивание (ККТ4). В холодильнике установлено 7 ККТ: pагрузочно-выгрузочный коридор (ККТ5, контролируется время прохождения); участок нанесения пищевой пленки (ККТ6); камера для гидроаэрозольной обработки (ККТ7); камеры и туннели охлаждения и замораживания (ККТ8); камеры хранения охлажденного мяса (ККТ9); камеры хранения замороженного мяса (ККТ10); экспедиция (ККТ11). В мясоперерабатывающем цехе установлена 1 ККТ (ККТ12). В ККТ6-ККТ12 контролируется температура воздуха и мяса, влажность воздуха и скорость его движения, скорость охлаждения, продолжительность нахождения мяса на объекте. По результатам текущего и периодического мониторинга выявленных ККТ холодильной цепи мясоперерабатывающего предприятия предпринимаются предупреждающее корректирующие действия для устранения потенциальных и обнаруженных рисков или снижения их уровня до допустимого. Таким образом осуществляется единый методический и организационный подход к обеспечению качества технологий применения искусственного холода на всем пути движения продукта – от выработки до потребителя.
