the article presents an overview of the main areas of application of starter cultures in the meat industry. Described the requirements for bacterial preparation, formulated the basic selection criteria for use in various technological purposes. theoretically proved that the starter cultures in the production of meat products are used for the enzymatic transformation of the structure of raw materials, the formation of a specific flavor, color stability, safety guarantees. application of applied biotechnology through genetic changes make it possible to design highly productive strains of microorganisms with desired characteristics
