Technology improving of the vegetative sandwich spreads on the basis of corn and soybean raw materials | Совершенствование технологии растительных бутербродных паст на основе сырья кукурузы и сои

English. The purpose is to study the usability of corn feedstock in the technology of vegetable sandwich spreads (SS) to develop their recopies and to improve some stages of technology. The main feedstock has been selected for the development of original recipes for SS – corn flour made from grain of modern hybrids bred by the Research Institute of Corn Breeding. As an additional component-basis of the product being developed there was chosen soybean grain of modern varieties bred by the Research Institute of Oil-Yielding Crops. The use of the main and additional feedstocks of the composition of the developed SS recipes based on their organoleptic evaluation is substantiated. The recipes developed are designed to expand the range of healthy food, since they are a balanced food composition with variable component and organoleptic characteristics. The novelty of our solutions is determined by the feedstock used, as well as the method of its processing in the technological process, which forms the special parameters of the process of its processing and requires the improvement of the existing technology. A method of preparatory processing of soybean feedstock is proposed and justified to minimize energy consumption at the hydrothermal processing stage (feedstock boiling). A schematic diagram of a device for processing food environment modulated by EMF in the range of resonant frequencies is given. A working hypothesis about the biotechnological nature of the obtained effect of reducing trypsin inhibitory activity by the proposed processing of the material under study was expressed. The advanced technological scheme for the production of SS according to the developed original recipes was improved. A hardware line has been proposed that allows the implementation of an improved technology.

Russian. Цель – изучить применимость сырья кукурузы в технологии растительных бутербродных паст (БП) с разработкой их рецептур и усовершенствованием отдельных этапов технологии. Подобрано основное сырьё для разработки оригинальных рецептур БП – кукурузная мука из зерна современных гибридов селекции ВНИИ кукурузы. В качестве дополнительного компонента-основы разрабатываемого продукта выбрано зерно сои современных сортов селекции ВНИИ масличных культур. Обосновано применение основных и дополнительных сырьевых компонентов состава разработанных рецептур БП на основе их органолептических характеристик. Разработанные рецептуры призваны расширить ассортимент продовольственных товаров здорового питания, поскольку представляют собой сбалансированный по нутриентному составу пищевой комплекс с вариабельными компонентными и органолептическими характеристиками. Новизну предлагаемых решений определяет применяемое сырьё, а также способ его обработки в технологическом процессе, что формирует особые параметры процесса его переработки и требует совершенствования существующей технологии. Предложен и обоснован способ подготовительной обработки сырья сои для минимизации энергозатрат на этапе гидротермической обработки (варки сырья). Приведена принципиальная схема устройства для обработки пищевых сред модулированным ЭМП в диапазоне резонансных частот. Высказана рабочая гипотеза о биотехнологическом характере полученного эффекта снижения трипсинингибирующей активности путём предложенной обработки исследуемого материала. Усовершенствована принципиальная технологическая схема производства БП по разработанным оригинальным рецептурам. Предложена аппаратурная линия, позволяющая реализовать усовершенствованную технологию.
