The analysis on efficiency of ethanol biosynthesis by Saccharomyces yeast | Оценка эффективности процесса биосинтеза этанола дрожжами рода Saccharomyces

English. There were studied the technological properties of production yeast races Saccharomyces cerevisiae S-04 (sample 1) and Saccharomyces uvarum (Carlsbergensis) (sample 2). The yeast was studied both in conditions of using in dry form, and in rehydrated form. The physiological status of yeast was estimated by microscopy. It was found that the yeast cells of sample 2 had slightly a larger size than in sample v1. The number of budding cells in sample 2 was 20%, and in sample 1 – 32%. The fermentation activity (FA) of dry yeast in sample 2 was 3.8%, and in sample 1 – 3.6%. Yeast rehydration had a positive influence on the FA in sample and sample 2. An increment in FA was on average 5%. The yeast of sample 1 was characterized by the highest FA with respect to barley wort when it was added to the wort in dry form – an amount of accumulated ethanol was 5.33 vol.%. When the yeast of sample 1 was added in the rehydrated form, its FA increased by 2.8%. The rehydration of sample 2 yeast increased its FA by 8.3%. It has been concluded that it is important to monitor the initial status of yeast, its viability, purity, FA, to take into account the composition of the medium fermented and condition of the fermentation process to provide an effective process of ethanol biosynthesis.

Russian. Изучали технологические свойства 2 производственных рас дрожжей (ДР) Saccharomyces cerevisiae S-04 (образец1 (ОБ1)) и Saccharomyces uvarum (Carlsbergensis) (ОБ2). Исследования ДР проводили как в условиях использования их в сухом виде, так и в регидратированном. Физиологическое состояние ДР определяли методом микроскопирования. Установили, что клетки ДР у ОБ2 имели несколько большие размеры чем у ОБ1. Количество почкующихся клеток у ОБ2 составляло 20%, а у ОБ1 – 32%. Бродильная активность (БА) сухих ДР у ОБ2 составляла 3,8%, а у ОБ1 – 3,6%. Регидратация ДР оказала положительное влияние на БА у ОБ1 и ОБ2. Прирост БА составил в среднем 5%. Наиболее высокой БА по отношению к ячменному суслу отличались ДР ОБ1 при внесении их в сусло в сухом виде – количество накопленного этанола составило 5,33 об.%. При внесении ДР ОБ1 в регидратировавнном виде их БА увеличилась на 2,8%. Регидратация ДР ОБ2 повысила их БА на 8,3%. Сделан вывод, что для обеспечения эффективного протекания процесса биосинтеза этанола важно отслеживать исходное состояние дрожжей, их жизнеспособность, чистоту, БА, учитывать состав сбраживаемой среды и условия протекания процесса брожения.
