The study of the influence of EM-agro (effective microorganisms preparation) on the content of organic acids, must and wine quality was carried out in 2015‒2017. It was found that the treatment of grapes with EM-agro promotes the acceleration of grape ripening and the improvement of such parameters as sugar content, acidity and pH. EM-agro treatment of Charivnyi grapes was able to reduce: total content of organic acids by 28%, titratable acidity ‒ by 14 %. However, substantial increase in total organic acids content of Cabernet Sauvignon, Odesskiy zhemchug, Agat tairovskiy, Otrada grapes and wines, made from EM-agro treatments, was observed. EM-treatment of vines during vegetation resulted in wine samples which were characterized by a more complex and intensive aroma and by a balanced and full taste.
