Selection of the indicating microorganism for controlling activity of the antimicrobial components produced by Lactobacillus reuteri LR1 | Выбор индикаторного микроорганизма для проверки активности антимикробных компонентов, продуцируемых Lactobacillus reuteri LR1

Activity of the antomicrobial components (AC) produced by Lactobacillus reuteri LR1 has been determined and indicating strain for checking possible application of functional components produced by Lactobacillus reuteri LR1 in the food sector has been chosen. The indicating strain suitable to determine activity of the AC produced by the Lactibacillus reuteri LR1 has been established by two methods: growing mixed population and hole diffusion in agar. Three conditionally pathogene strains have been taken as indicating ones: E. coli ATCC 25922, S. typhimurium and S. aureus ATCC 6538. Their number in the food products is given in the legilslating documents. The highest activity the strain L. reuteri LR1 demonstrated in relation to the strain E. coli ATCC 25922. Survival of the strain was 61,1% after 24 h. and 25,6% after 48 h of mutual cultivation at t 37±1 deg С. Survival of the S. aureus ATCC 6538 and S. typhimurium after 24 and 48 h of mutual cultivation at t 37±1 deg С differed slightly and was 75,02 and 70,8–68,9% respectively. The strain E. coli ATCC 25922 has been chosen as an indicating strain.

Определена активность антимикробных компонентов (АК), продуцируемых Lactobacillus reuteri LR1, и выбран индикаторный штамм для проверки применимости функциональных компонентов, продуцируемых Lactobacillus reuteri LR1, в пищевой промышленности. Индикаторный штамм, подходящий для определения активности АК, продуцируемых Lactobacillus reuteri LR1, выбирали двумя методами: развивающихся смешанных популяций и луночной диффузии в агар. В качестве индикаторных штаммов выбраны три условно-патогенных микроорганизма – E. coli ATCC 25922, S. typhimurium и S. aureus ATCC 6538, количество которых нормируется в продуктах питания на законодательном уровне. Наибольшую активность штамм L. reuteri LR1 проявлял по отношению к штамму E. coli АТCC 25922. Выживаемость этого штамма составила 61,1% через 24 ч и 25,6% через 48 ч сокультивирования при t 37±1град. С. Выживаемость S. aureus ATCC 6538 и S. typhimurium через 24 и 48 ч совместного культивирования при t 37±1 град. С различалась незначительно и составила 75,02 и 70,8–68,9% соответственно. В качестве индикаторного штамма выбран штамм E. coli АТCC 25922.
