EPOCAS DE DESHOJE Y SUS EFECTOS SOBRE LA COMPOSICIÓN QUÍMICA DE MOSTOS Y COMPOSICIÓN QUÍMICA Y CALIDAD SENSORIAL DE LOS VINOS DE LOS CV. CHARDONNAY Y CABERNET-SAUVIGNON, EN EL ÁREA DE CAUQUENES

English. In Chile, leaf removal is a recommended practice for many Chilean vineyards. It is suggested that it promotes better illumination and ventilation for the fruit, facilitates spraying of chemicals and harvesting, and that it enhances color in black grapes. As well, it diminishes the herbaceous flavor in wine cultivars, and results in a better general wine quality. Nevertheless, if not mechanized, it is slow and expensive work. In the 1992/93 season at the interior dryland of Cauquenes, Chile, a field trial to evaluate the effects of defoliation before set, before veraison and after veraison, was performed on commercial vineyards of Chardonnay and Cabernet-Sauvignon. About 60% of the leaves in the bunch zone were eliminated. Musts and wines were chemically analyzed and sensory evaluated. Results showed some differences in some components, but they were erratic and of high variability. In the sensory evaluation, for both cultivars, it was only possible to differentiate the wines from the non-defoliated vines, but not the effect of the time of defoliation. It was not possible to determine the causes of the differences, or to attribute the changes to the levels of the analyzed compounds.

Spanish; Castilian. En Chile el deshoje es una práctica recomendada para muchos viñedos. Se le atribuyen ventajas como mejorar la iluminación y ventilación de los racimos, facilitar los tratamientos fitosanitarios y la cosecha, y mejorar el desarrollo del color en cultivares tintos. Además, atenuación del gusto herbáceo en los vinos de los cultivares que lo desarrollan y mejoramiento de la calidad global del vino. En la temporada 1992/93, en el secano interior de Cauquenes, se desarrolló un trabajo tendiente a determinar sobre qué factores de composición y calidad del vino se ejercían efectos benéficos con el deshoje y cuál era la época más apropiada para su realización en los cv. Chardonnay y Cabernet-Sauvignon. Se eliminó en forma manual aproximadamente el 60% de la hojas en la zona de los racimos después de cuaja, antes de pinta y después de pinta. Se analizaron los mostos y vinos, y estos últimos fueron sometidos a un panel de degustación. Los resultados, si bien demostraron que algunos componentes químicos sufrían cambios en sus niveles al compararlos con aquellos de plantas sin deshojar, también demostraron que, en general, los efectos son erráticos y de alta variabilidad. En la evaluación sensorial, para ambos cultivares, sólo fue posible diferenciar los vinos provenientes de las plantas sin deshoje, no así el efecto de las épocas de realización. No fue posible determinar la causa de las diferencias o atribuirlas a cambios en los niveles de alguno de los compuestos analizados.
