Evaluation of starch modifications from thermo-mechanical processes by NMR | Evaluation des modifications de l'amidon dans des procédés thermiques et mécaniques par RMN

Low resolution NMR technique was used to measure the effects of different process conditions on the transverse relaxation signal of different industrial products, sauces, cake batters and corn flakes. In sauces, the increase of the global relaxation time was related to cooking time and temperature. The cooking effect of batters was associated t a significant increase fo the liquid-like starch protons and a transfer of sugared water in the starch partially gelatinized. The transverse relaxation behaviour of corn was very sensitive to the flaking process : a proton population tended to disappear with the increase of the flaking intensity.

La technique RMN basse résolution était utilisée pour mesurer les effets de différents paramètres de procédés sur le signal de relaxation transversal de différents produits industriels : sauces, cakes et corn flakes. Dans les sauces, l'accroissement global des temps de relaxation était relié au temps et à la température de cuisson. L'effet de la cuisson des pâtes à cake était associé à un accroissement significatif des protons ayant un comportement "liquide" et à la migration d'eau sucrée dans l'amidon partiellement gélatinisé. La relaxation transversale des flocons de maïs était très sensible au procédé de floconnage : une population de protons tendait à disparaître avec l'accroissement de l'intensité du floconnage.
