This chapter discusses the composition and repartition (salt equilibrium) of mineral ions (calcium, magnesium, sodium, potassium, inorganic phosphate, chloride and citrate) in milk. Sample preparation and analytical methods for determining the contents of these ions and repartition in milk are presented. Moreover, the ways of modulating the content of major minerals by addition of different salts or reduction by different technologies such as membrane filtration or chromatography are described.
