In 2015-2017, the Plant Production Institute named after VYa Yuriev of NAAS studied dependence of the protein content on growing conditions and genotype and evaluated its biological value. Seventy lines and cultivars of hulled and hulless spring barley were taken as the test material. It was found that under similar weather conditions the protein content in grain of accessions was mainly determined by genotype. This parameter was significantly higher (12.0515.46%) in hulless barley accessions than in hulled ones (10.91-13.82%). Among the hulless accessions, the protein content in 3 cultivars (Hatunok [15.46%], Merlin [15.23%], and Kozatskyi [15.16%] exceeded the average (14.08%). Cultivars Parnas and Berkut (69.80 mg and 74.20 mg of tyrosine per gram of protein, respectively) were distinguished by biological value of protein. These cultivars are important as starting material for the breeding barley cultivars suitable for the production of baby and dietary foods.
