Quality evaluation on several cultivars of East Java salacca (Salacca edulis Reinw.)

Research had been done by harvesting fruit in each centre of production in East Java at r optimal picking maturity, during fruit season in 1996. Harvested fruits were then observed for their physical, chemical characteristics and consumers' preference, using objective andsubjective methods. Result showed, that Super cv. and Lumut cv. were the two biggest size, i.e. 96.14 gr and 99.48 gr for the average fruit weight, 56.00 cm and 54.20 cm for diametre, and 14.61 mm and 16.48 mm for flesh thickness. The highest ratio of total soluble solid andı acid content was resulted by Nase cv., Manalagi cv. and Kerbau cv., which were 108.14, 103.46 and 96.73 respectively. Observation on consumers' preference showed, that sweetı taste, size, flesh and skin colour of Super cv. were most prefered by the consumer. Size,ı shape and skin colour of Lumut cv. also were most prefered by the consumer. Sweetness of Nase cv. and Manalagi cv. were most preferred by the consumer, while acid taste only for Nase cv., size and shape for Kerbau cv.ˇ
