To understand the significance of the justification of use, one should bear in mind thatthe degree of risk of using additives at 6 th place, according to the scale of risk assessment, after therisk of microbial agents, the risks of improper nutrition, environmental pollutants, natural toxicantsin foodstuffs and pesticide residues. In order for the chemical compound to be approved for usein the food industry as an additive, it must undergo complex control. The risk analysis system hasestablished a risk assessment methodology at the global level and in a different socio-economicenvironment. Food additives represent a potential health risk for consumers, and the level of riskis calculated through the food additive safety assessment process. The international scientificprocess of risk assessment is dealt with by the Joint Expert Committee for Additives, the WorldHealth Organization and the Food and Agriculture Organization of the United Nations. The useof the additive is not left to the free will of the manufacturer, but their positive list (list of allowedadditives), production, traffic, quality (purity), restrictions on use, labeling and other requirementsare regulated by law. The paper provides an overview of the international risk assessment, testingand methods that precede the use of additives in the food industry.
