Влияние загрязнителей воды на качество молочных продуктов | Impact of water pollutants on the quality of dairy products

The stability of milk proteins-raw materials used in the production of reduced dairy products when stored in the presence of organohalogen contaminants (trichloroethylene, chloroform and chlorophenol) formed during chlorination in water treatment was studied. It has been found that the stability of proteins in dairy raw materials does not change in the presence of chloroform. At the same time, there is a decrease in the concentration of proteins and studied contaminants (trichloroethylene, chlorphenol) in the combined presence. Theoretically, the mechanism of interaction of interchangeable and essential amino acids of dairy products (cysteine, methionine, valine, leucine, tryptophan, glutamine, and others) with trichloroethylene and chlorphenol is substantiated. As a result of research, it has been found that the total protein content of serum prepared in water in the presence of phenol and chlorphenol has decreased by 10%, the content of phenol and chlorphenol by 3–20%, depending on the amino acid. It has been concluded that water used for production of fruit-and-whey drinks should be purified from organic contaminants.

Russian. Изучена стойкость белков молока-сырья, используемого в производстве восстановленных молочных продуктов, при хранении в присутствии галогенорганических контаминантов (трихлорэтилена, хлороформа и хлорфенола), образующихся при хлорировании в процессе водоподготовки. Выявлено, что стойкость белков в молочном сырье не изменяется в присутствии хлороформа. При этом отмечено снижение концентрации белков и изучаемых контаминантов (трихлорэтилена, хлорфенола) при совместном присутствии. Теоретически обоснован механизм взаимодействия заменимых и незаменимых аминокислот молока-сырья (цистеин, метионин, валин, лейцин, триптофан, глутамин и другие) с трихлорэтиленом и хлорфенолом. В результате исследований выявлено, что общее содержание белков сыворотки, приготовленной на воде в присутствии фенола и хлорфенола, снизилось на 10%, содержание фенола и хлорфенола на 3–20% в зависимости от аминокислоты. Сделан вывод, что воду, применяемую для производства фруктово-сывороточных напитков, необходимо очищать от органических загрязнителей.
