Research of technological properties of apples and their suitability for processing | Исследование технологических свойств яблок и пригодности их для переработки

Russian. Проведено сравнительное изучение пищевой ценности и технологических свойств яблок осенних (Айдаред (АД), Жигулевское (ЖГ), Спартан (СП)) и зимних (Гала (ГЛ), Голден делишес (ГД), Северный Синап (СС)) сортов, выращенных в Белгородской обл. Установлено, что содержание сухих веществ и сахаров в изучаемых плодах колебалось от 13,0 и 10,4 (АД) до 16,0 и 12,8% (ГД), органических кислот – от 0,5 (ГД) до 1,0% (СС). Минимальное содержание витамина C отмечено у яблок СП и ГД (9,8 и 10,6 мг/100 г), а максимальное – у ЖГ и СС (13,9 и 13,7 мг/100 г). Наибольшее содержание P-активных катехинов наблюдали в яблоках ГЛ и СП (121 и 117 мг/100 г.), а наименьшее – в яблоках СС и ГД (92 и 100 мг/100 г). Максимальным содержанием пектиновых веществ (6,4 и 6,0 мг/100 г) отличались яблоки ЖГ и ЛГ. Они же были наиболее богаты водорастворимыми формами пектина (1,1 и 1,0 мг/100 г). Наилучшим сырьем для производства джема оказались яблоки сорта ЖГ, содержание в которых сухих веществ, сахаров, органических кислот составляло 15,4%; 12,3 и 1,0% соответственно. Содержание сухих веществ, сахаров, органических кислот, витамина С, белков, жиров, пищевых волокон в джеме, полученном из этих яблок, составляло 69,53; 48,54; 0,31%, 1,2 мг/%, 0,3; 0,2 и 1,2% соответственно; калорийность - 269,5 ккал. Введение в рецептуру джема ягод земляники в количестве 10 и 20% от массы яблок улучшало его органолептические свойства, повышало содержание витамина C, органических кислот, белка, жира и пищевых волокон, снижало содержание сахаров и калорийность. Сделан вывод о существенном влиянии сорта на технологические свойства яблок, выращенных в одинаковых природно-климатических условиях и по одной агротехнике.

English. There has been conducted a comparative study of nutrition value and technological properties of autumn apple varieties (Idared (ID), Zhigulevskoe (ZG), Spartan (SP) and winter apple varieties (Gala (GL), Golden delicious (GD), Severny Sinup (SS) grown in the Belgorod. The content of dry matters and sugars in the studied fruits has been found to range from 13.0 and 10.4 (ID) to 16.0 and 12.8% (GD), organic acids – from 0.5 (GD) to 1.0% (SS). The minimal content of vitamin C was observed in apples SP and GD (9.8 and 10.6 mg/100 g), and the maximal content was in ZG and SS (13.9 and 13.7 mg/100 g). The highest content of R-active catechines was observed in apples GL and SP (121 and 117 mg/100 g), and the least one was in apples SS and GD (92 and 100 mg/100 g). The maximal content of pectins (6.4 and 6.0 mg/100 g) was characteristic of apples ZG and GL. They were richest in water-soluble pectin forms (1.1 and 1.0 mg/100 g). The best feedstock for production of jam was apples of the ZG varieties comprising dry matter, sugars, organic acids was 15.4%; 12.3 and 1.0%, respectively. The content of dry matter, sugars, organic acids, vitamin C, proteins, fats, dietary fibers in jam produced from these apples was 69.53; 48.54; 0.31%, 1.2 mg/%, 0.3; 0.2 and 1.2% 69.53; 48.54; 0.31%, 1.2 mg/%, 0.3; 0.2 and 1.2%, respectively; caloric value – 269.5 kcal. Adding to the formulation of jam strawberries in an amount of 10 and 20% of the weight of apples improved its sensory properties, increased the content of vitamin C, organic acids, protein, fat and dietary fibers, and reduced the content of sugars and caloric value. It has been concluded that a variety greatly influences the technological properties of applies grown in identical natural climatic conditions and according t the same agrotechnology.
