Estabilidade da cor de geléia de jambo (Eugenia malaccensis, L.) sem casca armazenada aos 25 ºC e 35 ºC na presença e ausência de luz Stability of the color of mountain apple jelly (Eugenia malaccensis, L.) without rind stored at 25 ºC and 35 ºC in the presence and absence of light

O suco de jambo sem casca foi caracterizado quanto ao pH, acidez total titulável, pectina, sólidos solúveis, relação sólidos solúveis/acidez total titulável (ATT) "ratio", açúcares redutores, porcentagem de umidade. Na geléia de jambo formulada com a adição de 0,28 % de ácido cítrico e 0,4 % de pectina ATM em relação ao suco, na proporção de 50 % de açúcar (90% de sacarose e 10 % de glicose) para 50 % de suco refinado, acondicionadas em copo de vidro e estocadas a 25 ºC e a 35 ºC, com e sem luz. A análise objetiva da cor foi feita por meio do espectrofotômetro CONCOR MS 1500 Plus, utilizando-se o iluminante C, ângulo de 10 graus e sistema Lab Hunter (configuração DREOL). Os dados foram submetidos à análise de variância e teste de Tukey, tendo-se isolado fatorialmente os fatores de armazenamento estudados (tempo, luz e temperatura). Foram calculados os modêlos cinéticos das variações das luminosidade (L Hunter), vermelho (aHunter) e amarelo (bHunter). A geléia apresentou uma diminuição de L Hunter durante o tempo de armazenamento estocagem, menor valor na ausência de luz e maior temperatura. A cor vermelha aHunter aumentou na geléia estocada sem luz e maior temperatura. Houve um acréscimo de aHunter ao longo do tempo de armazenamento. O cálculo da cinética da luminosidade, do vermelho e do amarelo durante o período de estocagem mostrou constante de velocidade de reação de 0,01389, 0,007565 e 0,0211 respectivamente.<br>The juice of pilled mountain apple had been characterized according to the pH, titratable acidity (AT), pectin, total soluble solids (SST), relation SST/AT - "ratio", reducing sugars and contents of moisture. In the mountain apple jelly formulated with the citric addition of acid 0,28 % of and 0.4 % of ATM pectin in relation to the juice, the ratio of 50 % of sugar (90 % of sucrose and 10 % of glucose) for 50 % of fine juice, conditioned in glass cup and storedat the 25 ºC and the 35 ºC, with and without light. The objective analysis was carried out using the CONOR MS 1500 Plus Spectrophotometer, illuminate C, 10 degree angle and Lab Hunter system (DREOL configuration). The data was submitted to the analysis of variance and Tukey test, whereas the storage factors studied (time, light and temperature) were factorially isolated. The kinetic modules of the variation of the luminosity the (L Hunter), red (aHunter) and yellow (bHunter), were calculated. The jelly presented a decrease of L Hunter during the storage period, lowest value in the absence of light and greater temperature. The red aHunter increased in the jelly stored without light and greater temperature. There was an increase of aHunter throughout the storage period.
