Refined vegetable edible oils and fats are consumed directly or indirectly through other food products. Edible oils andfats has whole range of nutritionally valuable components but also they can contain comntaminents of different origin.Some of the contaminents present in edible oils and fats are heavy metals, pesticide residue, polycyclic aromatic hydrocarbons, phtalates, mineral oils, 3-monochlorpropane-1,2-diol esters, glycidyl esters and others. In a different refiningprocesses content of 3-monochlorpropane-1,2-diol esters varies which will be shown in this text.
