The paper presents a specific case of storing cleaned and dried sunflower seeds over a long period of time. The specificity is reflected in the geometry of the analyzed cells in which the sunflower is stored and the inability to monitor graintemperatures as an indicator of the respiration process. Due to the specific geometry of the cells, the analyzed graincannot be raised until it is fully emptied. The cells were filled with sunflower seeds of different moisture and impuritiesin order to determine the increase in free fatty acids after the storage period. The Silo is equipped with a ventilation system whose use can subsequently affect the moisture content of the stored sunflower. Assuming that the moisture contentof the sunflower seed after drying in the optimum mode, however, is higher than required under the specified specificconditions, the ventilation system was used to subsequently lower the moisture in order to slow down the processes inthe sunflower seed.
