The influence of different forms of selenium compounds on the veterinary and sanitary indicators of pork | Влияние разных форм соединений селена на ветеринарно-санитарные показатели мяса свиней

English. The studies were conducted in the Penza region. As a result of the veterinary and sanitary assessment of pig meat and fat, it was proved that the introduction of selenium compounds into the diet of fattening pigs contributed to the accumulation of microelements in muscle tissues. In all groups of animals, a greater accumulation of selenium was recorded in the longissimus dorsi muscle, in comparison with the great femoral muscle. But relative to the control group, the greatest accumulation of the trace element was recorded in the femoral major muscle. So in the first experimental group in the longest muscle of the back there was more selenium than in the control, by 19.1%, and in the second one - by 26.0%. In the femoral major muscle, the excess of this indicator, compared with the control, was 26.8 and 35.3%, respectively, in the groups. It was found that selenium compounds were involved in the physiological processes of the body, affect the conversion and metabolism of lipids, and contributed to an increase in essential polyunsaturated fatty acids in pork fat. The introduction of selenium compounds into the diet of pigs contributes to an increase in essential polyunsaturated fatty acids in lard, increases the content of unsaturated fatty acids in meat. This undoubtedly increases the biological value of meat and lard. The indifference of meat and meat products in terms of protein, fat, dry matter content to the tested biogenic preparations has been proved. However, a significant increase in the yield of valuable parts of the carcass was established during the slaughter of fattening pigs. Thus, studies have shown that the use (orally) of selenium-containing compounds of organic and inorganic nature at a dose of 0.3 mg of selenium per kg of feed make it possible to increase the biological value of pork due to the accumulation of selenium in muscle tissue up to 0.237 mg/kg, and an increase in essential fatty acids in fat and lipids of meat. The greatest effect was observed when using selenopyran.

Russian. Исследования проводили в Пензенской области. В результате проведения ветеринарно-санитарной оценки мяса и шпика свиней доказано, что введение в рацион откормочных свиней соединений селена способствует накоплению микроэлемента в мышечной ткани. Во всех группах животных отмечалось большее накопление селена в длиннейшей мышце спины, по сравнению с большой бедренной. Но относительно контрольной группы наибольшее накопление микроэлемента отмечалось в большой бедренной мышце. Так в первой опытной группе в длиннейшей мышце спины селена было больше, чем в контроле, на 19,1%, а во второй – на 26,0%. В большой бедренной мышце превышение этого показателя, по сравнению с контролем, составило 26,8 и 35,3%, соответственно группам. Установлено, что соединения селена участвуют в физиологических процессах организма, влияют на конверсию и метаболизм липидов, способствуют увеличению незаменимых полиненасыщенных жирных кислот в шпике. Введение в рацион свиней соединений селена способствует увеличению незаменимых полиненасыщенных жирных кислот в шпике, увеличивает содержание ненасыщенных жирных кислот в мясе. Это, несомненно, увеличивает биологическую ценность мяса и шпика. Доказана индифферентность мяса и мясопродуктов по содержанию белка, жира, сухого вещества к испытуемым биогенным препаратам. Однако, установлено достоверное увеличение выхода ценных частей туши при убое откормочных свиней. Таким образом, исследования показали, что использование (перорально) селенсодержащих соединений органической и неорганической природы в дозе 0,3 мг селена на кг корма позволяет повысить биологическую ценность свинины за счет накопления селена мышечной тканью до 0,237 мг/кг, и увеличения незаменимых жирных кислот в шпике и липидах мяса. Наибольший эффект наблюдался при использовании селенопирана.
