English. The content of heavy metals (lead, cadmium and copper) in beef produced in different biogeochemical provinces of Yakutia was determined. Sampling was carried out in 10 districts of Yakutia belonging to different biogeochemical provinces. The research covered the Central, Vilyuisk, Northern and Southern zones of the Republic. Measurements were carried out by the voltammetric method. It has been established that the accumulation and distribution of heavy metal compounds in animal organs and tissues depends on the ecological situation of the region in which they are grown. The concentration of heavy metals in beef produced in both the Central and Vilyuisk zones did not exceed the maximum allowable concentration (MAC). In the beef samples from the Northern Zone, an almost double excess of the MAC for lead was detected, the concentration of which was 0.976 ± 0.262 mg/kg (P is less than 0.05). In the beef samples from the Southern zone, an excess of the MAC for lead by 33-83.8% was recorded. A copper deficiency was detected in all the surveyed biogeochemical provinces. Its content in meat ranges from 0.354 ± 0.16 to 1.003 ± 0.417 mg/kg. Monitoring of the content of heavy metals in meat should be carried out constantly.

Russian. Определяли содержание тяжелых металлов (свинца, кадмия и меди) в говядине, произведенной в разных биогеохимических провинциях Якутии. Отбор проб проводили в 10 районах Якутии, относящихся к разным биогеохимическим провинциям. Исследованиями охватили Центральную, Вилюйскую, Северную и Южную зоны республики. Измерения проводили вольтамперометрическим методом. Установлено, что накопление и распределение соединений тяжелых металлов в органах и тканях животных зависит от экологической ситуации региона, в котором они выращены. Концентрация тяжелых металлов в говядине, произведенной и Центральной и Вилюйской зонах, не превышала предельно допустимую (ПДК). В пробах говядины из Северной зоны выявлено практически 2-кратное превышение ПДК по свинцу, концентрация которого составила 0,976 ± 0,262 мг/кг (P меньше 0,05). В пробах говядины из Южной зоны отмечено превышение ПДК по свинцу на 33-83,8%. Во всех обследованных биогеохимических провинциях выявлен дефицит меди. Ее содержание в мясе колеблется от 0,354 ± 0,16 до 1,003 ± 0,417 мг/кг. Мониторинг содержания тяжелых металлов в мясе следует проводить постоянно.
