Безглютеновый квас из гречишных красящих сахаров | Gluten-free kvass from buckwheat colored malts

Russian. Оценивали возможность получения безглютеновых квасов на основе красящих гречишных солодов (ГС). В ходе исследований получали светлый, карамельный, темный и жженый ГС. Из каждого типа ГС готовили опытные образцы кваса и оценивали их органолептические и физико-химические показатели качества. В работе использовали стандартные методы оценки. Установили, что экстрактивность ГС была существенно ниже, чем у ржаного солода, и у светлого, темного, карамельного и жженого ГС она составляла 68,1; 59,6; 52,2 и 52,4% соответственно. Цвет, кислотность, вязкость и содержание свободного аминного азота были в пределах нормируемых и рекомендуемых значений. Сусло получали настойным способом, сбраживали его сухими пивными дрожжами низового брожения (Saflager 34/70) и купажировали сахарным сиропом и лимонной кислотой. Образцы кваса отличались видом и долей в засыпи цветных ГС. Контрольный образец готовили полностью из светлого ГС. Доля карамельного и светлого ГС в опытных образцах составляла 40%, а жженого ГС – 1%. По органолептическим показателям лучшим признан квас, приготовленный из смеси светлого (60%) и темного (40%) ГС. По физико-химическим показателям контрольный и все опытные образцы квасов соответствовали требованиям нормативной документации. Доказана возможность получения квасов с использованием красящих ГС, не содержащих в своем составе глютен, и благодаря этому пригодных для использования в питании больных целиакией.

English. A possibility of preparing gluten-free kvasses based on coloring buckwheat malts (BM) was evaluated. During the study, light, caramel, dark and burnt BMs were obtained. Experimental samples of kvass were prepared from each BM type, and their organoleptic and physico-chemical quality indicators were evaluated. The standard evaluation methods were used in the work. It has been found that the extractivity of BM was significantly lower than that of rye malt, and in light, dark, caramel and burnt BM it was 68.1; 59.6; 52.2 and 52.4%, respectively. Color, acidity, viscosity and the content of free amine nitrogen were within the specified and recommended values. A wort was prepared by the infusion method fermenting it with dry bottom fermentation brewing yeast (Saflager 34/70) and blending with sugar syrup and citric acid. Samples of kvass were characterized by the look and proportion of colored BM in the stock-line. The control sample was prepared entirely from light BM. The proportion of caramel and light BM in the experimental samples was 40%, and the burnt BM was 1%. According to the organoleptic indicators, kvass made from a mixture of light (60%) and dark BM (40%) is recognized as the best. According to the physicochemical parameters, the control and all experimental samples of kvass met the requirements of the regulatory documentation. Thus, a possibility of preparing kvasses using coloring BM that do not comprise gluten, and for this reason suitable for use in the nutrition of celiac patients has been proven.
