Main aspects of treating, restoring and supporting the health of children with phenylketonuria | Основные аспекты лечения, восстановления и поддержки здоровья детей, больных фенилкетонурией

Phenylketonuria (PK) is a hereditary disease in which the metabolism of the amino acid phenylalanine (PA) is disrupted, which can further cause damage to the central nervous system, lagging in mental and physical development. The most acceptable way to maintain the health of a FK patient is diet therapy organized from the first days of a child's life, i.e. eating foods with a reduced protein content and PA. In the world, the search and development of plant, animal and combined food products with reduced protein and PA content are carried sufficiently actively. It is known that the phenylalanine ammonia lipase enzyme effectively converts PA into a harmless metabolite trans-cinnamic acid. This enzyme is contained in sufficient quantities in plants rich in flavonoids and anthocyanins, so it is advisable to use them when developing specialized products to be included in the diet of PK patients. It is promising to create protein hydrolysates and protein substitutes with a reduced content of PA and their use in the production of dietary foods. It is permissible to introduce eggs and meat into the foods for the nutrition of children with C, subject to restrictions of the total protein content. In Russia and Belarus, several dietary products based on modified starch have been developed (dry mixes for the production of mashed potatoes, pasta and cereals, cupcakes and crackers), the protein and PA content in which does not exceed 1 g and 50-70 mg per 100 g of the product, respectively. Recipes of canned vegetable and meat and sausages with a protein content of 2 g and PA 150 mg per 100 g of the product have been developed. The introduction of these products into the diet of PK patients will contribute to the preservation and improvement of their health. The production of such foods using domestic technologies will increase their availability to consumers.

Фенилкетонурия (ФК) - наследственное заболевание, при котором нарушен метаболизм аминокислоты фенилаланин (ФА), что может в дальнейшем вызвать поражение центральной нервной системы, отставание в умственном и физическом развитии. Наиболее приемлемым способом поддержания здоровья больного ФК является организованная с первых дней жизни ребенка диетотерапия, т.е. употребление в пищу продуктов с пониженным содержанием белка и ФА. В мире достаточно активно ведутся поиск и разработка растительных, животных и комбинированных продуктов питания с пониженным содержанием белка и ФА. Известно, что фермент фенилаланинамиачная липаза эффективно превращает ФА в безвредный метаболит транс-коричную кислоту. Этот фермент в достаточных количествах содержится в растениях, богатых флавоноидами и антоцианами, поэтому их целесообразно использовать при разработке специализированных продуктов для включения в рацион больных ФК. Перспективно создание белковых гидролизатов и заменителей белка с пониженным содержанием ФА и их использование в производстве диетических продуктов питания. В состав продуктов для питания больных ФК детей допустимо вводить яйца и мясо при условии ограничения суммарного содержания белка. В России и Белоруссии разработано несколько диетических продуктов на основе модифицированного крахмала (сухие смеси для производства картофельного пюре, макаронных и крупяных изделий, кексов и крекеров), содержание белка и ФА в которых не превышает 1 г и 50-70 мг на 100 г продукта соответственно. Разработаны рецептуры растительно-мясных консервов и сосисок с содержанием белка 2 г и ФА 150 мг на 100 г продукта. Введение этих продуктов в рацион больных ФК будет способствовать сохранению и улучшению их здоровья. Производство таких продуктов по отечественным технологиям повысит их доступность для потребителей.
