Fatty acid profile of mechanically deboned chicken minced meat treated with high hydrostatic pressure | Профиль жирных кислот куриного фарша механической обвалки, обработанного высоким гидростатическим давлением

English. The fatty acid profile of mechanically deboned chicken minced meat (MDCMM) and its biological value were studied. The changes occurring in the MDCMM after its treatment with high hydrostatic pressure (HHP) were revealed. The control sample of the MDCMM was not treated. The prototype of the MDCMM was subjected to HHP treatment at 250 MPa with an exposure of 30 min at ambient temperature (20 ± 2) deg C. Fatty acids (FA) were analyzed in the form of their methyl esters. To assess the value of the fatty acid profile, there were used indicators of a hypothetically ideal lipid recommended by experts and reflected in scientific publications. The FA profile in MDCMM was determined immediately after its receipt and after 3 days of storage at t 4 deg C. It has been shown that the FA profile of MDCMM is formed additionally from FA lipids present in bone marrow and bone tissue, subcutaneous fat, skin and abdominal fat. The higher content of polyunsaturated fats in the fat fraction is due to their intake from bone and spinal cord particles. It has been shown that the profile of the FA of MDCMM is characterized by low biological efficiency, imbalance in relation to polyunsaturated, unsaturated and saturated FA. The HHP treatment did not have a significant effect on the profile of the FA of MDCMM (the differences between the experimental and control samples before and after storage were unreliable). To assess the lipid value of MDCMM, the nutritional value index (NVI) should be used, as well as to determine the amount of dietary fats with a desirable neutral (DFA) and undesirable hypercholesterolemic effect (OFA), and their ratio.

Russian. Исследовали жирнокислотный профиль фарша куриного механической обвалки (ФКМО) и его биологическую ценность. Выявляли изменения, происходящие в ФКМО после его обработки высоким гидростатическим давлением (ВГД). Контрольный образец ФКМО не обрабатывали. Опытный образец ФКМО подвергали обработке ВГД при 250 МПа с экспозицией 30 мин при температуре окружающей среды (20 ± 2) град. С. Жирные кислоты (ЖК) анализировали в виде их метиловых эфиров. Для оценки ценности жирнокислотного профиля использовали показатели гипотетически идеального липида, рекомендованные экспертами и отраженные в научных публикациях. Профиль ЖК в ФКМО определяли сразу после его получения и через 3 сут хранения при t 4 град. C. Показали, что профиль ЖК ФКМО формируется дополнительно из ЖК липидов, присутствующих в костном мозге и костной ткани, подкожно-жировой клетчатке, коже и брюшном жире. Более высокое содержание полиненасыщенных ЖК в жировой фракции обусловлено их поступлением из частиц костей и спинного мозга. Показали, что профиль ЖК ФКМО отличается низкой биологической эффективностью, несбалансированностью в отношении полиненасыщенных, ненасыщенных и насыщенных ЖК. Обработка ВГД не оказала значительного влияния на профиль ЖК ФКМО (различия между опытными и контрольными образцами до и после хранения были недостоверны). Для оценки липидной ценности ФКМО следует использовать индекс питательной ценности (NVI), а также определять сумму пищевых ЖК, обладающих желательным нейтральным (DFA) и нежелательным гиперхолестеринемическим эффектом (OFA), и их соотношение.
