Перспективы применения технологии ИК-дегидрирования плодоовощного сырья в условиях малых предприятий | Prospects of application of the technology of IR-dehydrogenation of fruit and vegetable raw materials in the conditions of small enterprises

Russian. Сокращение потерь сырья на этапах сбора и хранения урожая может быть обеспечено благодаря частичной его переработке по месту сбора. С этой целью на одном из предприятий г. Саратова разработана ресурсосберегающая малогабаритная установка для ИК-дегидрирования плодоовощного сырья, обеспечивающая достаточно высокую производительность и качество готовой продукции с сохранностью 80–90% эссенциальных компонентов сырья. Для разработки технологии ИК-дегидрирования и апробации установки в качестве объектов исследования использовали образцы апельсинов и пряной смеси в свежем и дегидрированном виде. Дегидратацию проводили способом резонансной ИК-сушки на длине волны ближнего и среднего инфракрасного диапазона 1,8–3,0 мкм. Методом обращенно-фазовой ВЭЖХ определяли содержание витаминов и полифенольных соединений в образцах апельсинов до сушки и после нее и сохранность хлорофилла в образцах пряной смеси. Установлено, что предложенный способ обезвоживания позволяет максимально сохранить витамины и хлорофилл. Наличие 1,9269 мг витамина С в 1 г дегидратированного апельсина соответствует содержанию этого витамина в 10 г свежего апельсина. Потери витамина С при хранении апельсиновых чипсов в течение 12 мес составили 8%. Продукты, произведенные с помощью предлагаемой технологии, сохраняют потребительские свойства (вкус, аромат, цвет), характерные для нативного сырья без технологической трансформации. Предложенный способ сохранения овощей и фруктов перспективен для малых фермерских и индивидуальных хозяйств. При расчете экономической эффективности передвижного цеха по дегидрированию плодоовощного сырья установлено, что рентабельность капитальных вложений составит от 30 до 37% в зависимости от способа подачи электроэнергии.

English. Reducing the loss of raw materials at the stages of harvesting and storage of the crop can be achieved by partially processing it at the place of harvest. For this purpose, a resource-saving small-sized plant for IR dehydrogenation of fruit and vegetable raw materials has been developed in one of the enterprises of Saratov city. This plant provides sufficiently high productivity and quality of finished products with the safety of 80–90% of the essential components of raw materials. To develop the IR-dehydrogenation technology and to test the installation, samples of oranges and a spicy mixture in fresh and dehydrated form were used as the research objects. Dehydration was carried out by the method of resonant IR drying at a wavelength of the near and middle infrared range of 1.8–3.0 microns. The reversed-phase HPLC method was used to determine the content of vitamins and polyphenolic compounds in the samples of oranges before and after drying and the preservation of chlorophyll in the samples of the spicy mixture. It has been found that the proposed method of dehydration allows preserving vitamins and chlorophyll as much as possible. The presence of 1.9269 mg of vitamin C in 1 g of dehydrated orange corresponds to the content of this vitamin in 10 g of fresh orange. The losses of vitamin C during the storage of orange chips for 12 months amounted to 8%. Products produced using the proposed technology retain consumer properties (taste, aroma, color) characteristic of native raw materials without technological transformation. The proposed method of preserving vegetables and fruits is promising for small farms and individual farms. It has been established by calculating the economic efficiency of a mobile shop for dehydrating fruit and vegetable raw materials that the profitability of capital investments will be from 30 to 37%, depending on the method of electricity supply.
